As for if the Uchigatana is worth it, the Iaito only does about 2 less damage when both are upgraded to standard +15. The Uchigatana may require less points in Dexterity, but since that is where most of the damage bonus for katanas come from, it's kind of pointless unless you're going for a Lightning/ Fire weapon.

Every weapon is viable. It's a matter of you being a viable user. Uchi is good but I'd recommend blacksteel Katana. It has a more versatile moveset, solid combos and better damage. Sellswords are good too. Other options are: schimitar, gotthards + estoc. Also harpe/murky are very good on 80 dex build. 1.While at 45 DEX, 14 STR and 50 FTH; Uchigatana +15 does 422 physical damage. Divine Uchigatana +10 does 202 physical & 293 Magic damage.
